a bag of baby spinach leaves
on shallot
olive oil
white wine vinegar or champagne vinegar
salt and pepper
pancetta or turkey bacon for non pork
slice the shallot in thin strips, place in bowl with equal parts olive oil and vinegar, a tablespoon of each should do, add a pinch or salt and pepper, you can use the pan drippings of the pancetta - or not, its all for flavor, mix the dressing over your spinach salad with the crumbled bacon.
